I'm so leery of chicken nugget recipes. They're usually dry and tasteless and are just weird unless they're fried {in my little fatty opinion}.
People, I'd like to announce that I think I've found an awesome chicken nugget recipe! And it's easy and healthy to boot! Woot woot!
I found the recipe here. She has better pictures than me, so go check those out for a better visual.
I love that these are:
a) baked, not fried
b) dipped in olive oil instead of milk & eggs, much less cleanup
c) not bone dry after baking
d) flavorful
Ingredients
- 2 chicken breasts, sliced in half and then into chunks
- salt & pepper to taste
- 1 tbsp olive oil
- 1/4 c seasoned Italian bread crumbs
- 2 tbsp panko bread crumbs
- 2 tbsp grated parmesan cheese
Directions
- Preheat oven to 425 degrees. Brush some olive oil onto a baking sheet.
- Put the olive oil in one bowl, and the bread crumbs and cheese into another bowl.
- Season your chicken with salt and pepper, and then dip into the olive oil being sure to coat all over, and then dip into the crumb mixture.
- Place chicken pieces onto baking sheet and bake for 8-10 minutes.
- Turn chicken pieces over and bake for another 4-5 minutes or until cooked through.
