Easy Green Chile Enchiladas {Mom Food}

Hello, my name is Jessica and I am the mother of two boys, ages one and three. No further explanation needed.

Sigh...seriously though, these two are going to be the death of me. All day long, I feel like someone is either hanging on me, stepping on me, whining for me, or sucking the life out of my body. Literally...Dacky prefers to get 95% of his nutrition from me at almost fifteen months old. Someone shoot me already.

These past few weeks have been particularly bad. Enter my new current, favorite meal.

I'm a green chili enchilada freak, but ain't no one around here got time for that. Preparing the chicken and shredding it, making the sauce, rolling them up, baking them...ugh. No. I mean, yes, but no, not right now. I just can't.

I was perusing The Pioneer Woman's blog when I found this recipe. Hail to that lady! She's got a taste for Mexican food and her recipes never fail to please.

You guys...this may or may not have been my lunch and dinner for like, the last five days. With the kids being sick, this is the fastest, warmest meal I can come up with for myself. And it's amazing. AH-MA-ZING.

Here's what I did: I made enough rice to last me several meals. I took a can of green chile sauce, and a can of green chiles and dumped them into a storage bowl together. When I make this recipe, I heat my rice up on a plate and I heat up 5-6 spoonfuls of my green chile mixture. I do the steps below, and I have my dinner!

(For extra pizzaz if you do have more than a few seconds to make dinner, you can saute chopped onions and add to the top of this. The Pioneer Woman did it. I have no such luxury of time to do that. But that's the beauty of this, you can make this any way you want, adding what you have or think might taste amazing on it).

I put four corn tortillas on a baking sheet covered with foil. I do four because I am a breastfeeding monster who could eat an entire cow. Use as many tortillas as you want in your little stack.

I put pepper jack and cheddar cheese on each tortilla.

Put them under my broiler on high (cause I don't have my rack positioned high...caaause I'm too lazy to move it...remember ain't no one got time for that, I have to work quick before my captors catch on that I've snuck off and am attempting to eat a meal).

Place my first tortilla my plate...

Sprinkle it with some warmed up chile sauce.

Repeat with all layers and top with whatever you have on hand. I had sour cream, but pico de gallo or salsa would probably taste pretty awesome. Or guacamole! Mmmm...

And you are ready to dine and feast, little mama! But you only have like two and half minutes maybe before you hear whining or someone being hit or someone wanting to nurse or someone wanting you to hold them up to the light switches this very second or they'll freak out....you know the drill.
