Cous Cous with Roasted Veggies, Basil, and Feta

I've never had cous cous until today, and I'm a little surprised by how much I like it.  It has this really nice flavor that I can't really describe.  The roasted veggies are of course so easy to make, and cous cous takes literally 5 minutes. I like how the tomatoes are a little sweetened, and the zucchini is savory...good combination.  This is being added to my "monthly" menu: healthy, tasty, and easy.
Ingredients:

  • 1 cup uncooked cous cous
  • 1 cup grape tomatoes
  • 1 zucchini, chopped in larger chunks
  • 1 yellow onion, chopped in larger chunks
  • 2-3 tbsp olive oil
  • 4-5 basil leaves (more or less)
  • 1/4 cup feta cheese
  • 1 tsp red pepper flakes (optional)
  • Kosher salt
  • Freshly ground pepper
Preheat oven to 375 degrees.
Put your veggies on baking tray and pour on olive oil.  Roll them around with your hands so they are completely covered in the oil.  Sprinkle on some kosher salt, freshly ground pepper, and some red pepper flakes (optional).  Roast for 40-60 minutes.
Make cous cous according to package instructions.
Put cous cous in large bowl, mix with veggies, and top with shredded basil leaves and feta.  Enjoy!
