A Quote and Update

I've been busy this week preparing for Piggie Smalls' 1st birthday party!  I'm a little nervous, a little sad, a lot excited 🙂  I want him to have a the most special day, even if he doesn't remember it or even know what's going on!  One day when he's grown and looks back on photos and videos, he'll see how loved he was.  
The menu:
  • NC pulled pork (I'm from NC remember!)  
  • Baked beans
  • Pasta salad (potato salad would've been too much to make for 35 people)
  • Red Velvet cake topper for Piggie to destroy
  • Tres leches birthday cake
  • Arroz con leche
My mother-in-law will be making the birthday cake and the arroz con leche.  That is her forte because she's a professional Mexican baker, and she makes the best cakes.  
Of course, I will be the one making Piggie Smalls' mini cake for him to destroy.  I love red velvet cake and and wanted to make his mini cake very decadent!  You only turn one once in your life, right?!  
I will be posting photos of the food and the recipes to go along with them.  I hope everyone is having a great week and enjoys an even better weekend!

    They are, aren't they? My mom told me "Why don't you just do cake and ice cream?" and I looked at her like she had 2 heads haha.
