Toddler French Toast Sticks

Happy first day of fall!  Where I am, there is no noticeable change that fall is upon us, but that hasn't stopped me from any fall baking or decorating!  Fall and winter are my favorite seasons.  They're so cozy and of course all of the best holidays occur during this time.  This year the holidays are going to be a little more special since Piggie Smalls is going to be almost 2 years old and able to enjoy so much more.  He loves all of mama's baking and I'm sure he's going to be thrilled with all the decorating this year.  I can't wait!

So anyway, I am about 5 months pregnant now with baby boy #2, and I am also still nursing Piggie Smalls.  To say that I'm a bit of a zombie in the mornings is an understatement.  A very hungry zombie who wants to make Piggie's breakfast as quickly as I can so I can start on mine. So I took to Pinterest and found this recipe from Onceamonthmom.com.  Oh...she is awesome.  This is her recipe for 90 toddler french toast sticks.  Spend an hour one morning making these up and then put them in the freezer.

I peeled and cut up a sweet potato, boiled it, and pureed it.  I added half a cup of this puree to the batter.  I had 1 1/2 cups left over so I divided that up and froze it.  You could also add syrup to the batter, I highly recommend it.  I will be doing that next time.

Piggie Smalls, upon tasting his first bite, exclaimed "Mmmmmmm!!!"  He never has any leftovers.
