Deluxe Sunday Morning Coffeecake

Deluxe Sunday Morning Coffeecake - From Joy of Cooking
8 to 10 servings
For the cake:
  • 2 cups all-purpose flour
  • 1 cup plus 2 tbps sugar
  • 1 tsp salt
  • 10 tbsp unsalted butter (1 1/4 sticks)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup buttermilk or full-fat or low-fat yogurt
  • 1 large egg
  • 1 tsp vanilla
For the streusel:
  • 3/4 cup walnuts or pecans, finely chopped
  • 1/2 cup firmly packed dark brown sugar
  • 1 tsp ground cinnamon
Directions:
Have all ingredient at room temperature.  Position a rack in the center of the oven.  Preheat the oven to 350 degree F.  Generously grease the bottom and lightly grease the sides of a 10-inch springfoam pan (I used a regular baking dish and it came out just fine). 
  1. Sprinkle bottom of the pan with dry breadcrumbs and turn lightly to coat.  Tap out excess crumbs.
  2. In a large bowl, whisk together the flour, sugar, and salt until well blended.
  3. Add and cut in the butter with a whisk until the mixture resembles coarse crumbs.  Remove 1 cup of the crumbs to a separate bowl and set aside.
  4. Add to the mixture the baking powder and baking soda and whisk thoroughly.  Add the buttermilk or yogurt, egg, and vanilla.  Whisk vigorously until the batter is smooth and fluffy, 1 1/2-2 minutes.  Scrape the batter into the prepared pan and smooth the top.
  5. For the streusel topping, add to the reserved crumbs the walnuts/pecans, brown sugar, and cinnamon.  Toss with a fork until blended.   6. Sprinkle the crumbs over the batter.  Bake until a wooden skewer inserted in the center comes out clean, 50-65 minutes.  Let cool in the pan on a rack for 5-10 minutes.  Slide a slim knife around the cake to detach it from the pan.  Enjoy.
