Yesterday was one of those days where I'm in a great mood, everything seems to be going smoothly, I start dinner around 7-ish...late because I talked to my mom on the phone for too long. I knew I'd be doing it in spurts because the baby was going to be requiring my attention, he needed a bath, and he would need to be put to bed which can take a while.
My dinner plan last night was: beans, rice, enchiladas.
The beans were going to take about 2 and a half hours. They needed frequent checking on because I needed to keep adding water once they absorbed it and I also needed to stir them every now then so they wouldn't stick to the bottom.
For the rice I needed to make the sauce which I do by putting tomatoes, garlic, and onion in my blender and then pouring that on my toasted rice before adding water. That would be easy if I didn't have a baby that started fussing.
Then I realized I hadn't even started my chicken for my enchiladas. So I get out another pot to boil them.
I again realized I needed to saute some onions and chiles and make a sauce for my chicken...eye was starting to twitch.
Had to take fussy Piggie Smalls to give him his bath. This was right before 8pm. Then I took a quick shower myself while the baby fussed and I sang "The Wonderpets" main theme song the entire time, trying to keep him from totally losing it. It kept him interested just long enough.
I go stir my beans, start my rice, and then go put the baby to bed. This took about 45 minutes. Nursing, rocking & singing, nursing again...tried to move slowly off the bed but he woke up, so more nursing.
Finally I'm back in the kitchen again. Beans and rice were pretty much done, but I still needed to shred the chicken.
At that point, I realized that I needed to make the tortillas. I wanted to kick myself for being so ambitious when I was at the store and thinking "I'll make my own tortillas!". I have a 7 month old, I don't have the luxury of making my own tortillas and assuring that I'll get any sleep in the same day if I do!
So I had to shred the chicken and mix it so I could make way for my tortillas on the stove top.
And then...I realized I had no can opener because my other one had broken. I was going to use canned sauce to put on top of my enchiladas and there was NO WAY I was going to make that from scratch because my feet were hurting and it was past 10pm.
So what did I do you ask? Oh, I took a little steak knife and stabbed the top of the can until I made a hole. And then I vigorously shook the can to get the sauce out and into my dish.
It was well past 11pm after all was said and done. Then I had the problem of having hot food that I couldn't just put in the fridge right away. So I went back to my room and read some blogs, nursed Piggie Smalls, and at around 12:30am, I went into the kitchen and put it all away. I froze half of the beans so I can have those for later use and put some of the food in tupperware for my husband's lunch.
And then I devoured two enchiladas while standing over the stove. They were sooooo good...oh my goodness...and at that precise moment, I was very happy I had home-made the tortillas.

oh. my. g-d. Girl, I cant even imagine making my own beans, let alone tortillas! But your story did make me laugh. You should cook a few chickens and then shred the meat and store them in a few bags and freeze them. You could do the same with some tortillas. Heck, you could make a whole batch of enchiladas and freeze those as well. That way you wont be eating dinner at 11pm.Thanks doll,The Glamorous Housewife
