Dulce de Leche Ice Cream Cookies

2 cans of sweetened condensed milk (I used Lechera's Dulce de Leche. If you use sweetened condensed milk, your spread will be lighter than what mine is in the photos.)
1 cup of butter
1/2 cup of sugar
pinch of salt
2 1/4 cups all-purpose flour
1 box of vanilla ice cream

Remove the label from the sweetened condensed milk cans. Place the cans in a pot and cover completely with water. Bring the pot to a boil, lower the heat to a simmer and let simmer for about 2 ½ – 3 hours, making sure to add more water as necessary to keep the cans fully submerged in water. Remove the cans of dulce de leche from water and let cool to room temperature.
Preheat oven to 350° F.
Cream together butter, sugar and salt and add the flour and combine. Roll out the dough to ½ -inch on a lightly floured surface. Using a 2 ½ – inch round cutter, cut out shortbread cookies and place on a baking sheet. Bake for 15-20 minutes until golden brown.
To assemble the ice cream sandwiches: while your cookies are cooling, start with the ice cream. But a cookie sheet lined with parchment paper in your freezer. On a cutting board, slice about a 1/2 sheet of ice cream or however thick you want your ice cream to be. Cut them out with your cookie cutter and transfer each one to the freezer as you go. It's a little messy and a little more difficult at first when the ice cream is fresh out of the freezer. Next, open your can of dulce de leche and spread on half of the cookies. Then, take a pie slicer to help pick up the ice cream from the freezer and put them one by one onto the cookies, wrap in saran wrap, and put back in freezer. I did it this way because the ice cream melts fast.
