This recipe is originally an apple crumble, which is equally delicious, but cherries pies are my favorite so I decided to substitute them for this. What I love love love about this recipe is that it taste just like a pie, except it takes about an hour less to make it. You just put your fruit in the dish, cover them with brown sugar and cinnamon, and then sprinkle on your topping of flour, oats, and butter. It goes in the oven for 20-25 minutes and it's done. This is the first crumble topping I've found that tastes just like pie crust, hence why I'm in love. I think I'll marry it.
Cherry Crumble
Serves 4-6
Topping
2/3 c all-purpose flour
1/3 cup rolled oats
3tbsp granulated sugar
1 stick of butter (1/2 cup)
Filling
4 large apples (or fresh/frozen berries)
2 tbsp firmly packed brown sugar
1 tsp cinnamon
Directions
1. Preheat oven to 425 F. Grease a 2-quart baking dish.
2. For the topping, place the flour, rolled oats, and granulated sugar and butter in a large bowl. Mix well.
3. For the filling, peel, core, and slice the apples (for berries, see below). Layer the apple slices in the prepared baking dish. Sprinkle the brown sugar and cinnamon over the apple slices. Sprinkle the topping mixture over the top.
4. Bake until the apples have softened and the crumble is lightly golden, 20-25 minutes. Serve warm.
You can replace the apples with berries, but sprinkle 1 tbsp all-purpose flour over them before covering with the crumble. The flour binds the liquid given off by the berries so the crumble doesn't become soggy.
To prepare my frozen cherries, I put them in a pot over medium-low heat and sprinkled on 1/2 cup sugar. After the juices released from cherries (about 10 minutes), I sprinkled 4 tbsp of cornstarch over the cherries to thicken the juice. This took about 5-10 more minutes.
