Baby's Roasted Veggies
- Half cup of each: baking potato, sweet potato, & squash (whatever root veggies you have)
- 1-2 tbsp extra virgin olive oil
- Kosher salt
- Pepper
- Cumin (optional)
Preheat oven to 375 degrees F. Cut veggies into strips that are 1/2 inch wide. Place on roasting pan and drizzle with olive oil. Roll veggies around in the pan with your hands to make sure olive oil is coated evenly. Sprinkle with salt and pepper and any other additional spices that you'd like. Roast for 15-20 minutes.

My little guy is 10 months, but he loves to eat everything. He will grab at whatever he can see and stuff it into his mouth!! And this is one of my favorite ways to eat veggies - I'm sure both of us would enjoy these!!

Oh my gosh, he sounds just like my baby! He will try any food that he can grab or that we offer. This is also one of my favorite ways to eat veggies, and I definitely ate these right along with him! Thanks for commenting.
